Title: Shrimp and Yellow Rice

Yield: 3 Servings

1/2cOlive oil
2 Garlic cloves
1 Small onion
1 Green pepper
1lbRaw shrimp;peeled & deveined
3/4cTomatoes
1pnSaffron
1tbSalt
1/2tsYellow food coloring
2cWater
1cRice
1/2cGreen peas; tiny
1cnPimentos; small jar
1 Parsley

Heat olive oil and saute the chopped garlic, onion, and green pepper. When half done, add the shrimp. When shrimp turn pink, add the tomatoes, saffron, salt, coloring and water. When mixture starts boiling, add 1 cup rice. Bake in oven at 350 deg. for 15 minutes. Garnish with peas, pimiento and parsley leaves.
